This is my go to easy Italian meal. It's the Italian answer to stirfry, which is great on a cold winter week night.

Ingredients
Olive oil
Vegetables: Peppers, Onions, Zucchini, Carrots, Mushrooms,
Ground Meat: beef, chicken, pork, turkey
Directions
- Sautee ground meat with a little oil.
- Set the meat aside or sautee the vegetables in a separate frying pan with a little more oil.

- Wilt spinach 1 handful at a time, I like to add about 4 - 5 handfuls for a pound of ground beef


- Mix together the veggies and ground protein

- Add your favourite tomato sauce and serve This can be served with pasta, quinoa or just enjoy as is!
