Sometimes I have an apple that is in the greatest of shape or is not my favourite variety. That's when I use them to make these muffins which are the right combination of sweet and wholesome.
Yield: 12-14 muffins
Muffin Ingredients
1 cup (250 mL) all purpose flour
1 cup (250 mL) whole wheat flour (or more all-purpose flour)
3 1/2 tsp (17 mL) Baking powder
1/2 tsp (2 mL) salt
1/2 cup (125 mL) sugar
1 apple peeled and finely chopped
1 egg lightly beaten
1 cup (250 mL) milk (coconut milk works too)
1/3 cup (75 mL) melted butter or margarine
Topping Ingredients
3 Tbsp (45 mL) Brown sugar
1 tsp (2 mL) cinnamon
1 tsp (2 mL) nutmeg
Muffin Directions
- In a large bowl, mix together flour, baking powder, salt and sugar.
- Stir in apple, this will keep the apple in the middle of the batter rather than having them fall to the bottom while baking.
- In a separate bowl, combine egg, milk and melted butter. This will look funny when you combine the melted butter with the cold milk and egg, but it will actually distribute more evenly. If you use coconut milk as a milk substitute it will look like the picture below, it is quite a bit thicker and I ended up needing to add about a quarter cup of water to make the batter come together.
- Add liquid ingredients to the dry, stirring just until moistened
- DO NOT OVER MIX, this is always a thick batter.
- Make the topping by combining brown sugar, cinnamon and nutmeg
- Spoon muffin batter into paper-lined or greased muffin pan, filling 1/2 full, then sprinkle a bit of the topping in the middle and finish filling the cups to 3/4 full.
- Sprinkle the remaining topping over the muffins. You should not have any topping left.
- Bake muffins at 400 degrees for 15-20 minutes
- Test muffins with a toothpick to ensure they're done and remove from the pan to cool on a cooling rack.
