Casseroles don't have to include Campbell's soup. This casserole is so flavourful and colourful that it will be the big hit at your next pot luck party.

Ingredients

Chicken
Tex-Mex seasoning
Salsa
Rice
Tortillas
Cheese
Peppers
Onions

Directions

1. Saute chicken that has been tossed in Tex-Mex seasoning
2. Saute peppers & onions
3. Cook rice, then toss generously with salsa
4. Assemble the casserole from bottom up: Rice, Veggies, Chicken, Tortillas, Cheese

5. Serve hot with a green salad and avacado dressing
