Ingredients
¼ English cucumber, peeled and grated
1 tsp kosher salt, divided
1 garlic clove, peeled, zested
¼ tsp white vinegar
¾ tsp Oil
½ cup Greek yogurt
Pinch ground pepper
Directions
- Grate the cucumbers. Mix with ½ tsp kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Press cucumber to squeeze dry. Set aside briefly.
- In one mixing bowl, place the garlic with remaining ½ tsp salt, white vinegar, olive oil, yogurt and pepper Mix to combine. Add the grated cucumber to the large bowl with the garlic mixture. Combine thoroughly.
