Nanaimo bars are a Canadian icon but many people are scared to make them. The homemade ones are so much better!

Bottom Layer Ingredients
1/2 cup unsalted butter
1/4 cup sugar
5 Tbsp cocoa
1 egg beaten
1 1/4 cups graham crumbs
1/2 cup finely chopped almonds
1 cup coconut
Middle Layer Ingredients
1/2 cup unsalted butter, melted
2 Tbsp and 2 tsp cream
2 Tbsp Vanilla custard powder
2 cups icing sugar
Top Layer Ingredients
6 squares semi-sweet chocolate (6 oz)
2 Tbsp Unsalted butter
Bottom Layer Directions
- Chop almonds in food processor until finely chopped.
- Melt butter, sugar and cocoa together in the top of a double boiler.
- Add egg and stir to cook and thicken.
- Remove from the heat and add in graham crumbs, coconut and nuts.
- Press firmly into an ungreased 8 inch square pan.

Middle Layer Directions
- Melt butter then mix together with cream, custard powder and icing sugar
- Beat until light and fluffy
- Spread over bottom layer
- Chill in the refrigerator for at least 1 hour to set the middle layer

Top Layer Directions
- Melt chocolate and butter over low heat.
- Pour over middle layer
- Let sit on the counter for approximately 5 minutes to cool the chocolate.
- With a fork draw designs on the chocolate layer and then chill in fridge until time to cut and serve
