Phyllo is a little difficult to work with but the crunch and wonderful packing make the effort all worth it.

Ingredients
Salmon
Salt
Pepper
Butter
Phyllo
Cream cheese
Pesto
Directions
- Seared the salmon in butter with salt & pepper

- Open the phyllo package and cover with a damp clean dishcloth, or the phyllo will dry and crack
- Place the seared salmon on 3 layers of buttered phyllo
- Top with cream cheese, tomato & a touch of pesto (sundried tomato pesto).


- Then fold into envelops


- Bake until golden (about 10 minutes) in a preheated oven of 350
