I love all things sweet potato. You may not think the flavours of this go together but they do, and beautifully I might add! This is not an overly sweet scone that you might have with a coffee or tea. It pairs nicely with soup but is sweeter than a traditional biscuit.

Sweet_Potato_Cheese_Scone

Yield: 8

Ingredients

250 mL Flour
25 mL Chives or green onions
15 mL Sugar
5 mL Baking powder
2 mL Baking soda
2 mL Salt
1 mL Ground black pepper
1 mL Paprika
Pinch of cayenne pepper
40 mL Chilled butter cut into 1 inch cubes
125 mL Cold cooked sweet potatoes (cubed)
60 mL Plain yogurt
1 Egg
20 mL Melted butter

Directions

  1. In a mixing bowl combine: flour, chives, baking powder, baking soda, salt, paprika and cayenne.
  2. Cut in cold butter until mixture is crumbly
  3. Stir in cheddar
  4. In a food processor combine sweet potatoes, yogurt, and eggs until smooth
  5. Add sweet potato mixture to the flour until just combined. Over mixing with make the dough tough.
  6. Turn the dough on a floured counter and gently knead 8-10 times.
  7. Pat the dough into a thick (2.5 cm) round pizza shape and cut into 8 wedges
  8. Brush the tops with melted butter and bake on parchment paper for 20-25 minutes at 375F
