It's a little harder to check for doneness with the nick and peak method but that's ok.

Ingredients
Fillet of salmon or steelhead trout
Homemade pesto (store bought would work too)
Directions
- Preheat oven to 400F
- On a baking sheet with sides place the salmon skin side down.
- Cover salmon with pesto and allow to marinate for 10-15 minutes at room temperature.

- Bake for 15 minutes then with a fork check for doneness by nicking the flesh and peaking to see if it is done. It should flake apart semi-easily. Add more time if necessary but be careful to not over cook the fish as it will dry out quickly.

- Serve with a side of Greek Lemon Potatoes
