Ingredients:

3 chicken breasts
5-8 minced garlic cloves
1 Tbsp soy sauce
1 Tbsp lemongrass paste
1 1/2 tsp fish sauce

Dipping sauce

Soy sauce Fish sauce
Lime juice
Minced garlic
Chili pepper (optional - pinch of sugar for sweetness)

Serve with

Vermicelli noodles
Blanched carrots - Julienne
Cucumbers
Cilantro
Chopped peanuts

Directions

  1. Marinate chicken thighs with garlic, lemongrass paste, soy sauce, fish sauce, & lime juice — let it sit for an 1 hr.
  2. Cook rice vermicelli noodles, rinse under cold water & drain.
  3. Air fry chicken at 380°F for 12–15 min (flip halfway) or until internal temperature reaches 74C
  4. Mix dipping sauce: warm water, fish sauce, lime juice, garlic & chili pepper (optional - pinch of sugar for sweetness)
  5. Serve with noodles, veggies, drizzle sauce & chopped peanuts
