Ingredients:

3 chicken breasts
5-8 minced garlic cloves
1 Tbsp soy sauce
1 Tbsp lemongrass paste
1 1/2 tsp fish sauce

Dipping sauce

Soy sauce Fish sauce
Lime juice
Minced garlic
Chili pepper (optional - pinch of sugar for sweetness)

Serve with

Vermicelli noodles
Blanched carrots - Julienne
Cucumbers
Cilantro
Chopped peanuts

Directions

  1. Cut chicken into 1 inch cubes
  2. Combine the marinade ingredients and thoroughly coat chicken. Allow to marinate for minimum of 10 minutes.
  3. Preheat air fryer to 400F
  4. Cook rice vermicelli noodles, rinse under cold water & drain.
  5. Air fry chicken at 380°F for 12–15 min (flip halfway) or until internal temperature reaches 74C
  6. Meanwhile, mix dip ingredients and adjust with seasoning to taste.
  7. Serve with noodles, veggies, drizzle sauce & chopped peanuts
