Ingredients:
3 chicken breasts
5-8 minced garlic cloves
1 Tbsp soy sauce
1 Tbsp lemongrass paste
1 1/2 tsp fish sauce
Dipping sauce
Soy sauce
Fish sauce
Lime juice
Minced garlic
Chili pepper (optional - pinch of sugar for sweetness)
Serve with
Vermicelli noodles
Blanched carrots - Julienne
Cucumbers
Cilantro
Chopped peanuts
Directions
- Cut chicken into 1 inch cubes
- Combine the marinade ingredients and thoroughly coat chicken. Allow to marinate for minimum of 10 minutes.
- Preheat air fryer to 400F
- Cook rice vermicelli noodles, rinse under cold water & drain.
- Air fry chicken at 380°F for 12–15 min (flip halfway) or until internal temperature reaches 74C
- Meanwhile, mix dip ingredients and adjust with seasoning to taste.
- Serve with noodles, veggies, drizzle sauce & chopped peanuts
