Sometimes you have extra rice or your looking for a beautiful dessert with only a small amount of effort. This dessert allows you to play with your food, you can build your sandcastle out of rice and have fun with the presentation.

Ingredients

1 cups uncooked Sushi (sticky) rice, well rinsed 1 1/2 cup coconut milk - divided 1 cup cup water 1/4 tsp salt 2 Tbsp icing sugar 1 ripe mangoes, peeled and sliced length wise Black sesame seeds Fresh herb for garnish

Directions

  1. Place water, 1 cup coconut milk and salt in medium saucepan. Mix well to break up coconut cream. Bring to a boil and stir in rice, lower heat to simmer.
  2. Cover and simmer for 15-20 minutes or until most of the liquid is absorbed.
  3. Remove from heat and allow to sit, covered, for another 5 minutes. Cool to touch.
  4. Peel mangoes and slice each side off the stone in the center.
  5. Mango seeds are flat and if your knife is hitting the seed, move the knife a little off from the seed and slice down. Lay the mango slice flat and cut into big chunks.
  6. In small bowl combine 1/2 cup coconut milk and icing sugar.
  7. To serve, place a mound of rice on a plate and lay a few slices of mango on the top of the rice or on the side.
  8. Drizzle the coconut milk sugar mixture over and sprinkle with a little bit of sesame seeds.
