Souvlaki

Like Kabobs, the word Souvlaki simply means “meat on skewers.” But Greeks also use it to describe the actual meal—warm pita, loaded with perfectly marinated grilled meat and topped with Tzatziki sauce.

Yield: 4 Skewers

Souvlaki Marinade

5-6 garlic cloves, peeled
3 tsp dried oregano
½ tsp dried rosemary
½ tsp sweet paprika
½ tsp Kosher salt
½ tsp black pepper
2 Tbsp olive oil
2 Tbsp chicken broth or white wine
2 Tbsp lemon juice
2 -3 boneless skinless chicken breasts

Directions:

  1. Preheat oven to 450F. Cover baking sheet with aluminum foil.
  2. Soak skewers in a deep sided baking dish for 10 minutes. This will prevent them from burning.
  3. Cut chicken into 1 ½ inch pieces
  4. Prepare the marinade. In the bowl of a small food processor or blender, add garlic, oregano, rosemary, paprika, salt, pepper, olive oil, broth, and lemon. Pulse until well combined.
  5. Place chicken in a large bowl. Top with marinade. Toss to combine, making sure chicken is well-coated with marinade. Allow the chicken to marinate for 15 minutes at room temperature.
  6. When ready, thread marinated chicken pieces through the prepared skewers and spread out on prepared baking sheet.
  7. Roast skewered meat for 12-15 minutes then check the temperature with thermometer. Souvlaki is done when thermometer reads 74C.
  8. Once ready or about ready, place under the broiler for 1-2 minutes to get them slightly grilled or to golden up the edges.
