I get bored with the normal onion dip for veggie trays. This dip is wonderful with veggies and with pita wedges.
Ingredients
1 cup Roasted red peppers
1 Clove minced garlic
3/4 cup Feta cheese - crumbled
1/4 cup Plain yogurt
2 Tbsp Olive oil
Fresh basil for garnish
Directions
- You can use canned and drained roasted peppers or roasted from scratch by cutting in half and removing the seeds from a bell pepper and placing on a cookie sheet and charring in the oven for 25 minutes or holding with tongs over a gas stove or BBQ. Then peel off the outer charred skin.
- Place all ingredients in a food processor and puree until smooth
- Chill to thicken slightly and serve with crudites
Crudites are traditional French appetizers consisting of sliced or whole raw vegetables which are typically dipped in sauces or dressings.
