I get bored with the normal onion dip for veggie trays. This dip is wonderful with veggies and with pita wedges.

Ingredients

1 cup Roasted red peppers
1 Clove minced garlic
3/4 cup Feta cheese - crumbled
1/4 cup Plain yogurt
2 Tbsp Olive oil
Fresh basil for garnish

Directions

  1. You can use canned and drained roasted peppers or roasted from scratch by cutting in half and removing the seeds from a bell pepper and placing on a cookie sheet and charring in the oven for 25 minutes or holding with tongs over a gas stove or BBQ. Then peel off the outer charred skin.
  2. Place all ingredients in a food processor and puree until smooth
  3. Chill to thicken slightly and serve with crudites

    Crudites are traditional French appetizers consisting of sliced or whole raw vegetables which are typically dipped in sauces or dressings.
