Yield: 2 cups sauce
Ingredients
1 large English cucumber - grated with skin on
2 tsp kosher salt
1 Tbsp fresh dill, chopped
1 Tbsp lemon juice
3 cloves minced garlic
2 cups plain Greek yogurt
TT salt & pepper
Directions
- Grate the cucumber. Toss with kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Press cucumber to squeeze dry. Set aside briefly. Discard the cucumber water.
- In one mixing bowl, place the garlic, white vinegar, olive oil, yogurt and pepper Mix to combine.
- Add the grated cucumber to the large bowl with the garlic mixture. Combine thoroughly.
- Sample and adjust seasoning with salt, pepper & dill.
- Place in the fridge for at least 1 hour before using in order for the flavors to develop more fully.
