Yield: 2 cups sauce

Ingredients

1 large English cucumber - grated with skin on 2 tsp kosher salt
1 Tbsp fresh dill, chopped
1 Tbsp lemon juice
3 cloves minced garlic
2 cups plain Greek yogurt
TT salt & pepper

Directions

  1. Grate the cucumber. Toss with kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Press cucumber to squeeze dry. Set aside briefly. Discard the cucumber water.
  2. In one mixing bowl, place the garlic, white vinegar, olive oil, yogurt and pepper Mix to combine.
  3. Add the grated cucumber to the large bowl with the garlic mixture. Combine thoroughly.
  4. Sample and adjust seasoning with salt, pepper & dill.
  5. Place in the fridge for at least 1 hour before using in order for the flavors to develop more fully.
