This is one of the recipes I use with my students during the milk and egg module. They always tell me that they don't like Swiss cheese, I take that as a challenge to prove them wrong! Students all want to try this once it comes out of the oven because it rises so beautifully.
I've had wonton wrappers in my freezer for longer than I would like to admit. I've used the wrappers to make crackers and cups for appetizers but I far prefer to use the wrappers to make wontons! There is now a large bag of frozen wontons ready to use at my beck and call.

Yield: 2 cups sauce
1 large English cucumber - grated with skin on
2 tsp kosher salt
1 Tbsp fresh dill, chopped
1 Tbsp lemon juice
3 cloves minced garlic
2 cups plain Greek yogurt
TT salt & pepper
A Piadina, is a simple Italian flatbread that closely resembles a flour tortilla. The bread is served folded in half over fresh fillings of thinly sliced meats, soft cheeses, and leafy greens. It was made quickly during my grade 11 class and they had time to enjoy it before the bell rang.
